Finally. A day or so late, but worth the wait. Here’s what we’re having for dinner this week! What are you having?

Monday:
Spaghetti squash with meatballs (finished scarfing mine down a couple hours ago, and I must say… mmmmm!) (In the pic above you can see we were planning on a salad tonight, but I impromptu-moved it to the end of the week – because I do what I want.)
Tuesday:
Healthy meatloaf (although my husband has no clue how healthy it is. He raves about it to all his buddies.)
AND oh-my-gosh-if-you-do-nothing-else-you-MUST-try-this Roasted Asparagus with Walnuts and Feta
Wednesday:
Chicken Bake with Spinach, Pears & Gorgonzola (will post recipe soon!)
Thursday:
Bible Sandwiches (MIGHT post recipe, but it’s so beloved, I don’t know if I can bring myself to share. Plus, my mother in law might disown me.)

Spinach Salad with Strawberries and Raspberry Orange Vinaigrette

I’m down on my knees. Please forgive me for being so late on my promise to deliver you my meal plan yesterday! Do you know how long it takes to count calories, fat, carbs, protein, fiber, sodium, sugar and cholesterol for all your recipes? A lot more than I figured! I know, I can post my meal plan without these things, but… well, then I wouldn’t be the world’s most sick and twisted perfectionist, would I?

I’ve been planning meals for my family a certain way for many months. This meal planner has helped me plan the week out in a jiffy, and keep things organized in the meantime. I’m so excited to finally be able to share it with you.

The meal plan features a color for each week of the month, spaces for breakfast, lunch and dinner for each day of the week, a column to note the cookbook and page (or website) on where to find each recipe when it’s time to start cooking, a mini-calendar for the week’s family activities so it’s fresh in your mind, and a snip-off grocery list to take shopping with you.

I’ve made a habit of saving certain weeks by laminating them. That way, when it’s time to go to the grocery and I don’t have a minute to plan things out, I just pick out a meal plan, stick it on the fridge, and slip the accompanying shopping list in my purse for the store. HELLO LIFE SAVER!
To make things even easier, I’ll be posting my own personal meal plans each week (including our family’s healthy recipes!).
